Powering Hundreds of Businesses Including:

You have reached the point where guessing at extraction is no longer interesting. Investing in a setup centered around the E61 brewing group means you are finally prioritizing thermal stability over the convenience of a fast-heating consumer appliance. This machine is for those who value the tactile response of rotative controls and understand that great espresso is a result of mechanical consistency rather than software presets. It is the shift from managing a machine's limitations to actually practicing the craft.

Product Features

Single Boiler w/ Heat Exchanger

A 1.8 L copper heat-exchanger boiler lets you brew and steam simultaneously — no waiting for the boiler to shift between modes. Copper's thermal conductivity means faster ramp time and more consistent temperatures through extended home sessions.

E61 Brewing Group

The E61 group head holds extraction temperature steady between pulls by circulating hot water through the group continuously. The Cellini Classic's brass brewing unit — finished in chrome — adds thermal mass that smooths temperature swings shot to shot.

Rotary Valves & Rotative Controls

Rotary valves and lever-style knobs give direct, mechanical control over steam and hot water without button menus or digital interfaces. That tactile control scheme is predictable to operate and straightforward to service.

Cool Touch Wands

Stainless steel cool-touch wands on both steam and water outlets stay safe to handle even mid-service. That matters when you're texturing multiple pitchers or rinsing the wand frequently — less hesitation, fewer interruptions.

Pressure Control & Monitoring

A 15 bar pump paired with a pressurestat and boiler manometer gives you the extraction pressure needed for espresso and the real-time feedback to hold it. The pressurestat keeps boiler pressure within your target range; the manometer confirms it at a glance.

58 mm Filter-Holder Compatibility

The 58 mm filter holder accepts commercial-size baskets and ships with 1-cup, 2-cup, and blind filters — so you have the tools for dialling in dose and running routine backflush cleaning from day one.

The Coffeeionado Take

Who's It For:

  • Home baristas upgrading from single-boiler machines — The E61 group and HX boiler provide simultaneous brew and steam with the thermal stability that single-boiler machines lack
  • Enthusiasts who value a classic, manual workflow — The mechanical pre-infusion and manual lever operation deliver a tactile extraction process without digital complexity
  • Daily home users pulling 2–4 drinks — The 1.8L boiler handles morning lattes and afternoon cappuccinos efficiently

It's Right For You If:

  • You are upgrading from a single-boiler and want simultaneous brew and steam without the complexity of a dual-boiler.
  • Your daily drink count is 2–4 and you value a classic, manual E61 workflow.
  • You are pairing this with a quality grinder and want consistent extraction without managing temperature surfing.

Things to Consider:

  • Suitable for 2–3 drinks in rapid succession, then requires recovery — this is a home machine, not a small-café workhorse.
  • The 20–30 minute warm-up is standard for E61 HX machines — plan on a smart plug or consistent schedule.
  • No PID and no shot timer — temperature management and extraction timing are managed by the E61 group is thermal mass and your technique.

Our Take:

The La Pavoni Cellini Classic is the E61 HX for baristas who want a straightforward, manual workflow — no PID, no programmable dosing, just a classic group head and a lever that rewards your technique. If you are stepping up from a single-boiler and want a machine that does not overthink the process, this is a solid, Italian-made choice.

Cellini Classic Espresso Machine

Mounted Group Pressure Gauge

The mounted group pressure gauge for pressure profiling is a valuable tool that allows baristas to closely monitor and adjust the pressure during the brewing process. This gauge provides real-time feedback on the pressure exerted on the coffee grounds, enabling baristas to fine-tune their technique for optimal extraction. Overall, this tool empowers you to take control over every aspect of the brewing process, resulting in a more precise and high-quality espresso experience.

Consistent Shots with the BPPC

The BPPC (Brewing Pressure Profiling Control) is undoubtedly one of the best features on the Botticelli. It is capable of managing extraction rates and maximizing the flow of espresso. With the BPPC, you can replicate the best shots you've ever pulled, eliminating the chances of getting inconsistent flavor profiles.

Heat Exchange Espresso Machine

The heat exchange espresso machine is designed to provide a consistent and efficient brewing experience. By utilizing a heat exchange system, the machine is able to simultaneously heat water for brewing and produce steam for frothing milk. This ensures that the temperature of the water remains stable throughout the brewing process, resulting in a flavorful and well-extracted shot of espresso.

1.8L Copper Boiler

Copper boilers in espresso machines offer exceptional heat conductivity, ensuring rapid heating and faster recovery times for a quicker startup. Maintaining optimal brewing temperatures is essential for consistently good espresso, and copper's ability to uphold steady temperatures contributes to a consistent brew quality. Additionally, copper's natural antimicrobial properties make it a hygienic choice for espresso machines by inhibiting the growth of bacteria and other microorganisms.

Insulated Boiler

Insulation is crucial for boilers to maintain heat effectively. Espresso machines are equipped with thermostats, pressure stats, and PIDs to constantly monitor and regulate the temperature of the boiler. If the temperature falls below a specific level, a heating element is activated to restore it. Boilers that are well-insulated release less heat, resulting in lower energy consumption for maintaining their temperature.

E61 Group Head

The E61 group head is renowned for its exceptional temperature stability, and this is further enhanced by the 9 pounds of quality brass used in its construction. This substantial amount of brass ensures that heat is evenly distributed throughout the group head, resulting in precise and consistent brewing temperatures.

Cool Touch Wands

One of the standout advantages of the La Pavoni Cellini is its top-notch safety feature. The cool-touch wands maintain a safe temperature throughout prolonged use, ensuring users can handle them without fear of burns or discomfort. This unique design also allows for effortless handling and maneuverability.

Energy-saving

The Cellini Classic's insulated copper boiler increases thermal stability and saves energy. You can brew coffees back-to-back within seconds as the Cellini features separate steam, water, and espresso functions, each with its own solenoid to enable you to perform these functions at the same time.

Designed for Easy Brewing

The Cellini is no doubt, a dream come true for coffee lovers. A machine built with the goal of making home baristas brew better espressos within seconds. No waiting to brew coffee first before foaming milk, the machine's heat mechanism lets you do both at the same time. What's more? You get a notification when water is running low and the machine shuts off when the water in the boiler is not enough to operate safely.

Water Quality & Machine Protection

Proper water quality is essential for optimal espresso extraction and long-term machine health. Use the guidelines below to ensure your machine performs at its best.

Parameter Ideal Range Why It Matters
Total Hardness 50-170 ppm Prevents scale buildup while maintaining flavor
pH Level 6.5-7.5 Ensures balanced extraction and protects internal components
Chlorine 0 ppm Eliminates off-flavors and prevents corrosion
TDS (Total Dissolved Solids) 70-150 ppm Optimal mineral content for extraction and taste
Total Alkalinity ~7.0 Stabilizes acidity and extraction
Chloride 0-28 ppm Prevents corrosion (especially in steel boilers)

Important Note

Always refer to your machine's manual for specific water quality recommendations and maintenance schedules.

Advisory

Install a water filtration system to maintain consistent water quality and extend the life of your espresso machine.

What This Means

  • Water that’s too hard → scale buildup, reduced performance
  • Water that’s too soft → flat, dull espresso
  • Improper water can damage internal components over time

Machine-Specific Considerations

  • These guidelines are safe for most home espresso machines
  • Some machines (especially with stainless steel boilers) require stricter limits on chlorides

Product FAQ

Does the La Pavoni Cellini Classic use a vibratory pump or a rotary pump?

The La Pavoni Cellini Classic is equipped with a vibratory pump, not a rotary pump. Vibratory pumps are common in home prosumer machines and provide stable pressure for espresso extraction.

Is the Cellini Classic a heat-exchanger machine or a dual-boiler machine?

The Cellini Classic is a heat-exchanger espresso machine. This means you can brew espresso and steam milk at the same time using a single boiler with separate heat paths for brewing and steaming.

Can the La Pavoni Cellini Classic be direct plumbed into a water line?

The standard La Pavoni Cellini Classic is designed as a pour-over machine and uses a removable water tank. It does not come from the factory set up for direct plumbing to a water line.

Does the Cellini Classic offer pre-infusion for better espresso extraction?

Yes. Because the Cellini Classic uses an E61 group head, it offers mechanical pre-infusion. When you start the shot, water is introduced at a lower pressure to gently soak the coffee puck before reaching full brew pressure, improving flavor and consistency.

Does this machine have cool-touch or no-burn steam and hot water wands?

The La Pavoni Cellini Classic typically comes with insulated ‘no-burn’ or cool-touch style steam and hot water wands. They are designed to stay cooler to the touch than traditional wands and reduce milk from burning onto the wand surface, though the metal tips can still get hot.

What type of group head does the La Pavoni Cellini Classic use, and is it compatible with standard portafilters?

The Cellini Classic uses a commercial-style E61 58 mm group head. It is compatible with standard 58 mm commercial portafilters and accessories such as tampers, baskets, and bottomless portafilters.

Does the Cellini Classic have PID temperature control or a traditional pressurestat?

The La Pavoni Cellini Classic traditionally uses a pressurestat to control boiler pressure and temperature, not a PID controller. Boiler pressure is monitored via the front pressure gauge, and brew temperature is managed through the heat-exchanger design and E61 group head.

What is the boiler material and size, and is it safe to use with filtered or softened water?

The Cellini Classic typically features a copper or brass boiler in the 1.6–2.0 liter range (exact size may vary slightly by production run). It is safe—and recommended—to use filtered or properly softened water to reduce scale buildup and extend the life of the boiler and internal components.

Please note, any discounts subject to void the paid installation offer.

At Coffeeionado, professional installation is included with qualifying espresso machine purchases. Our goal is to make the process as seamless as possible — from coordinating the technician to getting your machine up and running on day one.

Which Machines Qualify

Free professional installation is included with all espresso machines of 2 groups or more where indicated on the product listing. This policy applies to espresso machines only and does not cover other coffee equipment such as grinders, brewers, or accessories.

If you are unsure whether your machine qualifies, contact us before purchasing and we'll confirm.

What's Included

  • Travel and labor costs for installation within the technician's service area (up to 2 hours of travel)
  • Setup, basic programming, and commissioning of the equipment
  • Scheduling during regular business hours, Monday through Friday
  • Associated taxes and fees related to the installation itself

Installation must be completed within 30 days of delivery of the equipment. The installation benefit lapses after this window and cannot be reinstated.

How Installation Is Arranged

Depending on your purchase, installation is handled one of two ways:

Arranged directly — In many cases, Coffeeionado or the manufacturer will coordinate and pay the technician on your behalf. We will contact you after your order is processed to schedule the visit.

Reimbursement — In some cases, you may be asked to arrange the installation locally using an authorized technician and submit a rebate form for reimbursement. Once approved, the covered amount will be refunded to the original payment method used for your order.

We will confirm which arrangement applies to your purchase at the time of order confirmation. If you have questions before purchasing, contact us and we'll walk you through it.

What's Not Included

The following are outside the scope of the installation policy and remain the customer's responsibility:

  • Travel or callout costs beyond the first 2 hours of the technician's travel time — if your location falls outside the local service area, the overage is your responsibility
  • Water filtration systems and installation materials — including plumbing fittings, tubing, plugs, outlets, and any other ancillary components required to prepare the site
  • Electrical or plumbing work — site preparation must be completed before the technician arrives
  • Training on equipment operation — installation covers commissioning only, not barista or operational training
  • False start or callout fees if the technician arrives and the site is not ready for installation

Important: If a technician arrives and cannot complete the installation because the site is unprepared, you will be responsible for any callout or false start fee charged by the technician. However, your installation benefit remains intact — the visit will be rescheduled at no additional cost to your policy.

Water Filtration Requirement

Water filtration must be installed and operational before or at the time of installation. This is not optional — operating a commercial espresso machine without proper filtration will void the manufacturer's warranty. If filtration is not in place at the time of the technician's visit, installation may need to be rescheduled and the callout fee will be your responsibility.

If you need guidance on water filtration requirements for your machine, contact us before scheduling your installation.

Service Area

Installation coverage is tied to the manufacturer's authorized technician service area, generally within a 1.5-hour radius of the nearest certified technician. If your location falls outside this area, Coffeeionado will make reasonable efforts to arrange a local authorized technician, but travel costs beyond the 2-hour coverage limit remain your responsibility.

Not sure if you're in a service area? Contact us before purchasing and we'll check your location.

After Installation

Once your machine is installed, we'll provide referrals for authorized service technicians in your area for ongoing maintenance and repairs. Coffeeionado offers lifetime support on all equipment we sell — we're here long after the install is done.

Governing Terms

This installation policy forms part of your agreement with Coffeeionado and is subject to our Terms of Sale and Terms of Service. In the event of any conflict, the Terms of Service governs.

Can I pick up the machine at your store?

We do not have a showroom or storefront for customer pickups, so orders cannot be picked up directly from us. That said, there is an exception for La Spaziale and La Pavoni products, you can contact us to arrange.

However, if you'd prefer, we can arrange to have your machine shipped to a local freight terminal/location for pickup instead. Let us know your city/state (or ZIP code), and we’d be happy to check the nearest terminal options for you.
