Powering Hundreds of Businesses Including:

You’ve reached the point where consistency is no longer a happy accident, but a requirement for your daily workflow. The integration of a PID controller and discrete shot timer provides the data needed to stop guessing and start replicating the extractions you actually enjoy. It is a heavy, deliberate piece of engineering that honors the ritual of the pull while maintaining the thermal stability required for back-to-back drinks. This is the moment your setup finally catches up to your technique.

Product Features

Heat Exchanger

A Heat Exchanger design lets you brew and steam simultaneously, so you can pull shots while steaming milk for back-to-back drinks. For a high-end home setup or small-volume service, that capability maintains workflow without waiting between functions.

E61 Group Head

The classic E61 group head provides built-in pre-infusion of water, helping to settle the grounds within the bed of coffee. That controlled pre-infusion makes extraction more repeatable, giving prosumers predictable behavior when dialing in a recipe.

PID Controller + Shot Timer

An easy-to-read PID controller and shot timer (as highlighted on Rocket models) give you direct control over brew temperature and extraction timing. Those readouts make adjustments measurable and speed up consistent dialing in of espresso.

Large Internal Boilers

Some Rocket machines feature internal boilers that are larger than comparable machines in the price point, which improves recovery time between steam and brew cycles. Faster recovery matters when you’re making multiple milk drinks in succession or entertaining guests.

Quiet Vibratory Pump

Rocket takes steps to keep the vibratory pump’s noise at a minimum, reducing audible vibration during use. That quieter operation is valuable for early-morning routines or a home environment where noise is a concern.

Actively Heated E61 Group

An actively heated E61 group (featured on Rocket’s FAST models) brings the machine to full brewing capability much faster—some models reach full readiness in about 15 minutes. Shorter warm-up times get you to stable, repeatable shots sooner, an advantage for focused craft brewing.

The Coffeeionado Take

Who's It For:

  • Home baristas building a permanent, plumbed-in station — The rotary pump and switchable water system deliver quiet, consistent pressure with the flexibility to plumb in when your setup is finalized
  • Enthusiasts who want PID precision and a shot timer — The discrete shot timer and PID controller provide the data to refine your extractions without guesswork
  • Daily home users pulling 2–6 drinks — The HX boiler handles simultaneous brew and steam for efficient morning routines

It's Right For You If:

  • You want PID control, a shot timer, and a rotary pump with the option to plumb in later.
  • Your daily drink count is 2–6 and you value quiet operation and consistent pressure from a rotary pump.
  • You are pairing this with a quality grinder and want a machine that grows with your setup.

Things to Consider:

  • Suitable for 2–4 drinks back-to-back, but requires recovery time for thermal stability and steam pressure on 120V.
  • The 20–30 minute warm-up is standard for E61 HX machines — a smart plug timer makes this a non-issue.
  • The switchable water system is a great feature but means you are paying for plumbing capability you may not use immediately.

Our Take:

The Giotto Evoluzione R is the Rocket for baristas who want a quiet rotary pump, PID precision, and the flexibility to plumb in when the time is right — a machine that grows with your setup rather than forcing a commitment. If you are building a serious home station and want the option to go permanent, this is the foundation that will last.

This is why we're thrilled to announce that we now cover all shipping, freight, and handling charges for our premium coffee equipment within the continental USA. Gone are the days of considering additional fees as you add items to your cart.

Rotary Pump for Quieter Operations

Rotary pump espresso machines offer many advantages, especially for home usage. Its low noise level is a key benefit, ensuring a quieter espresso experience. Rotary pumps have a longer lifespan of approximately 15 years, making them a reliable option for long-term use and reducing the need for frequent replacements. Additionally, they provide more consistent pressure and achieve quick pressure buildup compared to vibratory pumps.

E61 Group Head

It also features E61 commercial group heads, which means you will always have consistent temperatures when pulling your shot. Just remember, with the heat exchange boiler, you will want to pull a 7-second flush to get the water a consistent temperature.

Heat Exchange Espresso Machine

The heat exchange espresso machine is designed to provide a consistent and efficient brewing experience. By utilizing a heat exchange system, the machine is able to simultaneously heat water for brewing and produce steam for frothing milk. This ensures that the temperature of the water remains stable throughout the brewing process, resulting in a flavorful and well-extracted shot of espresso.

1.8L Copper Boiler

Copper boilers in espresso machines offer exceptional heat conductivity, ensuring rapid heating and faster recovery times for a quicker startup. Maintaining optimal brewing temperatures is essential for consistently good espresso, and copper's ability to uphold steady temperatures contributes to consistent brew quality. Additionally, copper's natural antimicrobial properties make it a hygienic choice for espresso machines by inhibiting the growth of bacteria and other microorganisms.

PID Temperature Control

PID, an abbreviation for Proportional-Integral-Derivative, is a feedback loop controller utilized in espresso machines to regulate and maintain the water temperature within the boiler. It means you can regulate the temperature on the machine.

With PID controller espresso machines, you ensure that the water temperature remains constant and ideal for producing high-quality espresso.

Perfect Espresso Experience

Rocket Espresso Milano wanted to make the Giotto Evoluzione R one of its most versatile espresso machines on the market. The Giotto has a rotary pump and includes a large reservoir tank or it can be direct plumbed from your main water supply. It also has advanced special features, such as the ability to adjust the pump pressure externally for finely tuned extractions and the inclusion of a new PID system for greater temperature stability.

The 1.8-liter boiler is made of pure copper with a lead-free brass end plate. It is plated with nickel to protect against copper oxidation and insulated for energy savings. The water reservoir holds 2.9 liters of fresh water, plus is made of a certified food grade plastic and has a low level indication system to warn you when the water is scarce.

Water Quality & Machine Protection

Proper water quality is essential for optimal espresso extraction and long-term machine health. Use the guidelines below to ensure your machine performs at its best.

Parameter Ideal Range Why It Matters
Total Hardness 50-170 ppm Prevents scale buildup while maintaining flavor
pH Level 6.5-7.5 Ensures balanced extraction and protects internal components
Chlorine 0 ppm Eliminates off-flavors and prevents corrosion
TDS (Total Dissolved Solids) 70-150 ppm Optimal mineral content for extraction and taste
Total Alkalinity ~7.0 Stabilizes acidity and extraction
Chloride 0-28 ppm Prevents corrosion (especially in steel boilers)

Important Note

Always refer to your machine's manual for specific water quality recommendations and maintenance schedules.

Advisory

Install a water filtration system to maintain consistent water quality and extend the life of your espresso machine.

What This Means

  • Water that’s too hard → scale buildup, reduced performance
  • Water that’s too soft → flat, dull espresso
  • Improper water can damage internal components over time

Machine-Specific Considerations

  • These guidelines are safe for most home espresso machines
  • Some machines (especially with stainless steel boilers) require stricter limits on chlorides

Product FAQ

Does the Rocket Espresso Giotto Evoluzione R have a rotary pump, and how loud is it compared to vibe pump machines?

Yes. The Giotto Evoluzione R uses a commercial‑style rotary pump, which is significantly quieter than vibration (vibe) pumps typically found on entry‑level machines. Most users describe it as a low hum rather than a loud buzzing sound, making it more suitable for open‑plan kitchens or early‑morning use.

Can the Giotto Evoluzione R be direct‑plumbed, or does it only work with the built‑in water tank?

It can do both. The Giotto Evoluzione R is designed to run either from its internal water reservoir or as a direct‑plumbed machine connected to your home water line. There is an internal switch to select the water source, and it ships with the necessary fittings for plumbing in, though you may need additional plumbing parts based on your specific installation.

Does this machine support pre‑infusion, and is the pre‑infusion time adjustable?

Yes. The Giotto Evoluzione R offers mechanical pre‑infusion through its E61 group head, which gently soaks the coffee puck before full pressure extraction. The pre‑infusion itself is not electronically programmable, but you can influence its length slightly by how you operate the lever. This type of pre‑infusion improves shot consistency and can help reduce channeling.

Is the steam wand a cool‑touch, no‑burn design, and does it have enough power for latte art milk steaming?

Yes. The Giotto Evoluzione R comes with an insulated, cool‑touch steam wand designed to stay much cooler than traditional wands and reduce the risk of burns. Its heat‑exchanger boiler and rotary pump provide strong steam power, so it can texture milk for latte art in 20–40 seconds depending on milk volume and tip size.

What kind of boiler system does the Giotto Evoluzione R use, and can I brew espresso and steam milk at the same time?

The Giotto Evoluzione R is a heat‑exchanger (HX) machine with a single copper or brass boiler that handles both brewing and steaming. Thanks to the HX design, you can brew espresso and steam milk simultaneously. This is one of the main advantages over single‑boiler machines, which usually require switching between brew and steam modes.

Does the machine have PID temperature control, and how precise is the brew temperature?

On the Evoluzione R, temperature is managed via a pressurestat rather than a front‑facing PID display. While it does not offer user‑programmable PID settings, the pressurestat maintains stable boiler pressure and, in turn, stable brew temperatures suitable for consistent espresso. For users wanting highly granular temperature adjustment, a machine with an exposed PID may be preferable, but the Giotto’s E61 group and HX system deliver very good temperature stability in typical home use.

What kind of power does it require, and can I use it on a standard US household outlet?

The Giotto Evoluzione R is designed for standard US household power. It runs on 110–120V, 60Hz and typically draws around 1,200–1,500 watts. It plugs into a regular grounded 15‑amp outlet, though using a dedicated circuit is recommended to avoid tripping breakers if you run multiple high‑draw appliances on the same line.

How large is the water reservoir, and does the machine have a low‑water indicator or automatic shutoff?

The internal water tank is typically around 2.5–3 liters in capacity, giving you several days of home use between refills, depending on how many drinks you make and how often you backflush or purge. When running on the reservoir, the machine includes a low‑water sensor; it will alert you and usually stop the pump to protect the boiler when the water level is too low. When it is direct‑plumbed, that sensor is bypassed because the machine has a continuous water supply.

How does free installation work?

We want to make your purchase as smooth as possible and will pay the installation via rebate on commercial espresso machines. This includes commercial machines with more than 1 group head and 220V.

If the certified installer needed is over 1.5 hours away then we will pay for the installation call (and install up to the value suggested on page minus call fee). Travel will be paid by customer. Inquire if you have any questions about your location.

Please note, any discounts subject to void the paid installation offer.

At Coffeeionado, professional installation is included with qualifying espresso machine purchases. Our goal is to make the process as seamless as possible — from coordinating the technician to getting your machine up and running on day one.

Which Machines Qualify

Free professional installation is included with all espresso machines of 2 groups or more where indicated on the product listing. This policy applies to espresso machines only and does not cover other coffee equipment such as grinders, brewers, or accessories.

If you are unsure whether your machine qualifies, contact us before purchasing and we'll confirm.

What's Included

  • Travel and labor costs for installation within the technician's service area (up to 2 hours of travel)
  • Setup, basic programming, and commissioning of the equipment
  • Scheduling during regular business hours, Monday through Friday
  • Associated taxes and fees related to the installation itself

Installation must be completed within 30 days of delivery of the equipment. The installation benefit lapses after this window and cannot be reinstated.

How Installation Is Arranged

Depending on your purchase, installation is handled one of two ways:

Arranged directly — In many cases, Coffeeionado or the manufacturer will coordinate and pay the technician on your behalf. We will contact you after your order is processed to schedule the visit.

Reimbursement — In some cases, you may be asked to arrange the installation locally using an authorized technician and submit a rebate form for reimbursement. Once approved, the covered amount will be refunded to the original payment method used for your order.

We will confirm which arrangement applies to your purchase at the time of order confirmation. If you have questions before purchasing, contact us and we'll walk you through it.

What's Not Included

The following are outside the scope of the installation policy and remain the customer's responsibility:

  • Travel or callout costs beyond the first 2 hours of the technician's travel time — if your location falls outside the local service area, the overage is your responsibility
  • Water filtration systems and installation materials — including plumbing fittings, tubing, plugs, outlets, and any other ancillary components required to prepare the site
  • Electrical or plumbing work — site preparation must be completed before the technician arrives
  • Training on equipment operation — installation covers commissioning only, not barista or operational training
  • False start or callout fees if the technician arrives and the site is not ready for installation

Important: If a technician arrives and cannot complete the installation because the site is unprepared, you will be responsible for any callout or false start fee charged by the technician. However, your installation benefit remains intact — the visit will be rescheduled at no additional cost to your policy.

Water Filtration Requirement

Water filtration must be installed and operational before or at the time of installation. This is not optional — operating a commercial espresso machine without proper filtration will void the manufacturer's warranty. If filtration is not in place at the time of the technician's visit, installation may need to be rescheduled and the callout fee will be your responsibility.

If you need guidance on water filtration requirements for your machine, contact us before scheduling your installation.

Service Area

Installation coverage is tied to the manufacturer's authorized technician service area, generally within a 1.5-hour radius of the nearest certified technician. If your location falls outside this area, Coffeeionado will make reasonable efforts to arrange a local authorized technician, but travel costs beyond the 2-hour coverage limit remain your responsibility.

Not sure if you're in a service area? Contact us before purchasing and we'll check your location.

After Installation

Once your machine is installed, we'll provide referrals for authorized service technicians in your area for ongoing maintenance and repairs. Coffeeionado offers lifetime support on all equipment we sell — we're here long after the install is done.

Governing Terms

This installation policy forms part of your agreement with Coffeeionado and is subject to our Terms of Sale and Terms of Service. In the event of any conflict, the Terms of Service governs.

Can I pick up the machine at your store?

We do not have a showroom or storefront for customer pickups, so orders cannot be picked up directly from us. That said, there is an exception for La Spaziale and La Pavoni products, you can contact us to arrange.

However, if you'd prefer, we can arrange to have your machine shipped to a local freight terminal/location for pickup instead. Let us know your city/state (or ZIP code), and we’d be happy to check the nearest terminal options for you.
