Investing in a three-group machine like the Opera 2.0 isn't about vanity; it's about eliminating the bottleneck that keeps your baristas from doing their actual jobs during a rush. When the line goes out the door, the AISI 316 steel groups provide the thermal stability needed to ensure the thousandth shot of the day tastes exactly like the first one you dialed in. This is the centerpiece of a coffee program that values actual consistency over the theater of the craft. You're buying the ability to scale your standards without asking your staff to perform miracles.
Product Features
Control Coffee Delivery System (CDS)
The Control Coffee Delivery System (CDS) gives full control over pre-infusion, infusion and post-infusion phases and includes PID infusion water temperature adjustment. That three-phase programmability lets operators tune saturation and pressure profiles for repeatable results across shifts.
PID Temperature Control
PID Temperature Control monitors and adjusts brew temperature in real time so set temperature holds steady during slow periods and under load. For busy service this reduces shot-to-shot temperature drift, keeping extraction consistent when demand spikes.
AISI 316 Steel Group
Built with an AISI 316 Steel Group and a 22lb/10kg Pure Steel construction, the Opera 2.0 improves thermal stability and resists oxidation. The heavier steel mass also helps minimize lime scale buildup—reducing service frequency in hard-use environments.
AISI 316 Stainless Steel Portafilter
The AISI 316 Stainless Steel Portafilter comes fitted with a “Competition Filter” designed to better capture aroma and fragrance compounds. That targeted filtration supports cleaner, more expressive shots across high-volume service where consistency matters.
Steam Control & Safety
AISI 316 Stainless Steel Free Motion Steam Taps combined with a “Cool Touch” Steam Wand provide flexible steam production and safer handling during long rushes. The system keeps steam delivery responsive for milk-heavy menus while reducing operator fatigue and burn risk.
3-Group High Throughput
The 3-Group Configuration runs three groups simultaneously for multi-barista service and high throughput, supported by a 10-liter steam boiler and an 8.3 kW power input. Designed for cafés and high-demand locations, it balances output capacity with commercial-grade serviceability.
The Coffeeionado Take
Who's It For:
Flagship specialty cafés and multi-location groups — 500–800+ shots daily with PID-controlled multi-boiler system and gear pump delivers the highest level of extraction precision at commercial throughput
Coffee academies and roastery labs — PID temperature control and the Coffee Delivery System (CDS) allow exact replication of shot parameters for training and quality control
Operations that demand the best — AISI 316 stainless steel group and portafilter represent the pinnacle of Sanremo's commercial engineering
Right For You If:
Your daily shot count is 500–800+ and you need gear pump precision with multi-boiler independence to handle sustained high-volume specialty service.
Your baristas are highly experienced and can leverage PID temperature control and the CDS system to design and replicate complex shot profiles.
You have direct plumbing, 220V power (NEMA L6-50), and the budget for a machine at the top of Sanremo's commercial range.
Things to Consider:
The Opera 2.0 sits at the premium end of Sanremo's lineup — the gear pump and AISI 316 components are exceptional but come at a price that demands serious volume or quality justification.
Gear pump systems require more specialized maintenance knowledge than rotary pump machines — confirm your service technician is experienced with gear pump commercial equipment.
This machine is designed for operations that will use its capabilities — if your team does not need gear pump pressure profiling or CDS precision, the standard Cafe Racer line offers Sanremo quality at a lower complexity level.
Our Take:
The Opera 2.0 is Sanremo's statement of what commercial espresso can be — gear pump precision, PID control, and AISI 316 construction in a 3-group package built for the highest-volume specialty operations. This is not for everyone, and it is not trying to be — it is for cafés that have outgrown everything else and need the best tool available.

Automatic Espresso Machine
Automatic espresso machines have revolutionized the way baristas operate in coffee shops, allowing them to focus on other tasks while still producing high-quality espressos. With programmable doses, baristas can set specific measurements for each shot of espresso, ensuring consistency and efficiency in the brewing process. This feature not only helps save time but also maintains the quality and flavor of the final product. Meanwhile, they can also focus on other tasks such as taking money, steaming milk, or other work tasks.
Efficiency to Perform
The Opera 2.0 espresso machine has a multi-boiler system that separates the water circuits, allowing the machine to generate steam and simultaneously maintain optimal control parameters for the extraction of coffee in terms of temperature and pressure, one espresso after another, during long periods of operation and intense workload.
Multi-boiler System
The advanced multiboiler technology guarantees unparalleled thermal accuracy through its sophisticated 4-point temperature PID control system. The steam and coffee circuits work independently from each other to maximize performance. This results in precise temperature management and time efficiency: In bustling coffee establishments, the use of multi-boiler systems enables baristas to simultaneously extract espresso shots, froth milk, and dispense hot water, leading to quicker and more efficient customer service.
Thermostability
Exclusively designed by Sanremo, the grouphead is manufactured from AISI 316 Stainless Steel. This, coupled with the multi-boiler system, ensures highly accurate thermal stability and maximum resistance to oxidation and lime scale in the group.
App Connected
At the touch of a button you can extract your programmed shot and even your pre-infusion, if selected. Let your baristas concentrate on other tasks while the Opera automatically pulls your shots. From the Barista App you can adjust parameter settings as well.

Important Note
Always refer to your machine's manual for specific water quality recommendations and maintenance schedules.
Advisory
Install a water filtration system to maintain consistent water quality and extend the life of your espresso machine.
What This Means
Water that’s too hard → scale buildup, reduced performance
Water that’s too soft → flat, dull espresso
Improper water can damage internal components over time
Machine-Specific Considerations
Some machines (especially with stainless steel boilers) require stricter limits on chlorides
Does the Sanremo Opera 2.0 Automatic 3 Group Espresso Machine have a rotary pump, and how loud is it during operation?
Yes. The Sanremo Opera 2.0 uses a commercial‑grade rotary pump designed for continuous, high‑volume use. Rotary pumps are significantly quieter than vibration pumps, so noise levels are relatively low and suitable for café or restaurant environments.
Is the Opera 2.0 3‑group a direct‑plumbed machine, or can it be used with a water tank?
The Opera 2.0 is designed as a direct‑plumbed commercial espresso machine. It must be connected to a mains water line and does not include an onboard water reservoir for tank-only operation.
Does this machine offer pre‑infusion or pressure profiling, and can those settings be customized for each group?
Yes. The Opera 2.0 supports programmable pre‑infusion and advanced pressure profiling. You can create and store multiple extraction profiles per group head, controlling pressure and flow at different stages of the shot for different coffees or recipes.
Are the steam wands cool‑touch or no‑burn, and how powerful is the steam for high‑volume milk steaming?
The Opera 2.0 is equipped with cool‑touch (no‑burn) steam wands that stay significantly cooler to the touch and reduce milk buildup. Steam output is high and designed for busy shops, allowing fast texturing of multiple milk drinks back‑to‑back.
What kind of boiler system does the Sanremo Opera 2.0 3 Group use, and can I control coffee and steam temperatures independently?
The Opera 2.0 uses a multi‑boiler system: individual brew boilers for each group and a dedicated steam boiler. This allows independent temperature control for each group head and separate control of the steam boiler temperature and pressure for stable performance under heavy use.
Does the machine have built‑in shot timers, volumetric dosing, and programmable recipes for each group head?
Yes. Each group includes programmable volumetric dosing and on‑screen shot timers. The interface allows you to program multiple recipes per group, saving specific dose volumes, temperatures, and pressure/flow profiles for consistent drink preparation.
What power requirements and voltage does the Sanremo Opera 2.0 3 Group need for installation in a US café?
The 3‑group Opera 2.0 is a high‑capacity commercial machine and requires a 208–240V, 60 Hz electrical connection on a dedicated circuit, with amperage sized according to local code and the machine’s rated wattage. Check the specific model’s technical sheet and consult a licensed electrician prior to installation.
Do I need a water filtration system, and does using one affect the warranty?
A plumb‑in water filtration and softening system is strongly recommended and often required to maintain warranty coverage. Proper filtration protects the boilers and internal components from scale and corrosion; using untreated hard water can lead to failures that are not covered under warranty.

Please note, any discounts subject to void the paid installation offer.
At Coffeeionado, professional installation is included with qualifying espresso machine purchases. Our goal is to make the process as seamless as possible — from coordinating the technician to getting your machine up and running on day one.
Which Machines Qualify
Free professional installation is included with all espresso machines of 2 groups or more where indicated on the product listing. This policy applies to espresso machines only and does not cover other coffee equipment such as grinders, brewers, or accessories.
If you are unsure whether your machine qualifies, contact us before purchasing and we'll confirm.
What's Included
Travel and labor costs for installation within the technician's service area (up to 2 hours of travel)
Setup, basic programming, and commissioning of the equipment
Scheduling during regular business hours, Monday through Friday
Associated taxes and fees related to the installation itself
Installation must be completed within 30 days of delivery of the equipment. The installation benefit lapses after this window and cannot be reinstated.
How Installation Is Arranged
Depending on your purchase, installation is handled one of two ways:
Arranged directly — In many cases, Coffeeionado or the manufacturer will coordinate and pay the technician on your behalf. We will contact you after your order is processed to schedule the visit.
Reimbursement — In some cases, you may be asked to arrange the installation locally using an authorized technician and submit a rebate form for reimbursement. Once approved, the covered amount will be refunded to the original payment method used for your order.
We will confirm which arrangement applies to your purchase at the time of order confirmation. If you have questions before purchasing, contact us and we'll walk you through it.
What's Not Included
The following are outside the scope of the installation policy and remain the customer's responsibility:
Travel or callout costs beyond the first 2 hours of the technician's travel time — if your location falls outside the local service area, the overage is your responsibility
Water filtration systems and installation materials — including plumbing fittings, tubing, plugs, outlets, and any other ancillary components required to prepare the site
Electrical or plumbing work — site preparation must be completed before the technician arrives
Training on equipment operation — installation covers commissioning only, not barista or operational training
False start or callout fees if the technician arrives and the site is not ready for installation
Important: If a technician arrives and cannot complete the installation because the site is unprepared, you will be responsible for any callout or false start fee charged by the technician. However, your installation benefit remains intact — the visit will be rescheduled at no additional cost to your policy.
Water Filtration Requirement
Water filtration must be installed and operational before or at the time of installation. This is not optional — operating a commercial espresso machine without proper filtration will void the manufacturer's warranty. If filtration is not in place at the time of the technician's visit, installation may need to be rescheduled and the callout fee will be your responsibility.
If you need guidance on water filtration requirements for your machine, contact us before scheduling your installation.
Service Area
Installation coverage is tied to the manufacturer's authorized technician service area, generally within a 1.5-hour radius of the nearest certified technician. If your location falls outside this area, Coffeeionado will make reasonable efforts to arrange a local authorized technician, but travel costs beyond the 2-hour coverage limit remain your responsibility.
Not sure if you're in a service area? Contact us before purchasing and we'll check your location.
After Installation
Once your machine is installed, we'll provide referrals for authorized service technicians in your area for ongoing maintenance and repairs. Coffeeionado offers lifetime support on all equipment we sell — we're here long after the install is done.
Governing Terms
This installation policy forms part of your agreement with Coffeeionado and is subject to our Terms of Sale and Terms of Service. In the event of any conflict, the Terms of Service governs.
Can I pick up the machine at your store?
We do not have a showroom or storefront for customer pickups, so orders cannot be picked up directly from us. That said, there is an exception for La Spaziale and La Pavoni products, you can contact us to arrange.
However, if you'd prefer, we can arrange to have your machine shipped to a local freight terminal/location for pickup instead. Let us know your city/state (or ZIP code), and we’d be happy to check the nearest terminal options for you.
