Powering Hundreds of Businesses Including:

There is a specific point where a vibratory pump and a water reservoir start to feel like compromises rather than features. The Ruby Pro is built for that transition, offering the same rotative pump performance found in machines twice its size and weight. It provides the thermal stability required to pull thirty shots in an afternoon without the group head losing its composure or your patience. You are no longer managing the limitations of your equipment; you are simply making the coffee.

Product Features

Rotative Pump

Equipped with a rotative pump for stable pressure delivery and consistent flow, helping maintain extraction control shot after shot in a high-attention home setup or small café.

Programmable Volumetrics

Three programmable buttons per brew group provide precise, repeatable dosing — set shot volumes once for consistent extraction and easier recipe control during steady service.

Low-Maintenance Boiler

Features a low maintenance boiler that prevents limescale buildup, reducing downtime and service needs so the machine stays dependable with less routine descaling.

Direct Water Feed

Direct water connection with a 3/8″ water connection eliminates reservoir refills, supporting continuous operation and saving time during busy service periods.

Steam + Hot Water Wands

Includes both steam and hot water wands so you can texture milk for lattes and dispense hot water for tea or cup warming — useful for a varied drink menu. The steam wand handles microfoam; the hot water wand covers americanos, tea, and pre-warming cups.

Multi-Format Brewing

Compatible with portafilters for ground coffee, capsules, and ESE paper pods, giving you the flexibility to run different service styles without changing equipment.

The Coffeeionado Take

Who's It For:

  • New café operators — The rotary pump, direct plumbing, and programmable volumetric dosing give you commercial-grade reliability in a single-group footprint that fits a small bar or counter
  • Restaurant and hospitality coffee programs — The 5L boiler and commercial steam handle 15–30 shots a day with milk drinks without the machine losing its composure or your patience
  • Bed-and-breakfast and small lodging — Programmable single-touch dosing means staff can pull consistent shots without barista training, and the direct plumbing eliminates reservoir refills

Right For You If:

  • You are running a small café, restaurant, or B&B and need a machine that handles 15–30 shots a day with consistent temperature and recovery.
  • You have a direct water line available (or plan to plumb one in) — this machine does not run on a reservoir.
  • You want commercial-grade components like a rotary pump and 58mm portafilter without the footprint and cost of a two-group machine.

Things to Consider:

  • At 120V, the 5L boiler takes 15–25 minutes to heat up and may need brief recovery pauses after extended back-to-back milk texturing — this is not the machine for a morning rush that pushes 40+ shots in an hour.
  • Without PID or programmable temperature control, thermal stability comes from the large boiler mass — it holds well for steady service but does not offer the precision of a PID-controlled machine for dialing in light roasts.
  • The direct plumbing requirement means you need a water line and filtration plan — factor that into your installation budget.

Our Take:

The Ruby Pro is the machine for operators who have outgrown their home setup but are not ready for a two-group commercial machine — the rotary pump and direct plumbing give you the reliability and consistency of a café workhorse in a single-group package. If you are pulling 15–30 shots a day and want a machine that just works without fussing over it, this is the right call.

Ruby Pro 1 Espresso Machine by Gaggia

Ruby Pro 1 by Gaggia Milano is the best ally for coffee enthusiasts with limited space available but who do not want to compromise on the taste of what’s in their cup. The Ruby has been specially designed for Office Coffee Service (OCS) environments and smaller food service locations with relatively low coffee consumption.

Paid Shipping ($249+ Value)

At Coffeeionado, we understand the frustration of hidden costs when making online purchases. This is why we're thrilled to announce that we now cover all shipping, freight, and handling charges for our premium coffee equipment within the continental USA. Gone are the days of considering additional fees as you add items to your cart.

2 Year Warranty ($199+ Value)

When investing in coffee equipment, peace of mind is worth its weight in gold. That’s why we proudly offer a 2-year warranty with this coffee machine purchase, a value of over $199. This warranty is your guarantee against manufacturer's defects and ensures that all parts are covered for an entire year from the date of purchase. We understand that our customers deserve the very best.

120 Volt Espresso Machine - Enhanced Safety

The internal materials used in its production, such as copper, which is known for its bactericidal properties, also contribute to its enhanced safety. Vetro is offered in various electronic models suitable for any coffee serving location, including tall cup options.

Espresso Priority System

The exclusive Espresso Priority System technology allows the preparation of your cup even if the water tank is at minimum level, or the boiler needs refilling after a hot water dispensing or the steam wand being activated. Allowing you to keep up with your workload during demanding times.

Programmable Doses

Set single, double, long and long double espresso doses to perfectly repeat your perfect recipes. At the touch of a button you can extract your programmed shot. Let your baristas concentrate on other tasks while the espresso maker automatically pulls your shots.

Automatic Espresso Machine

Automatic espresso machines have revolutionized the way baristas operate in coffee shops, allowing them to focus on other tasks while still producing high-quality espressos. With programmable doses, baristas can set specific measurements for each shot of espresso, ensuring consistency and efficiency in the brewing process. This feature not only helps save time but also maintains the quality and flavor of the final product. Meanwhile, they can also focus on other tasks such as taking money, steaming milk, or other work tasks.

Comfort and Convenience

Many espresso machines are sometimes designed with non-user friendly controls thus making it difficult for no-experience users to use them. Gaggia's Ruby is designed ergonomically with non-slippery knobs and a double-outlet filter holder for better ease of usage and which could produce one or two cups at a time.

It has two programmable dose selections and a continuous button. Equipped with an espresso priority system, the machine allows for the complete preparation of a coffee despite the water tank being at the minimum level or the boiler needing refilling.

Capsule Pods

Capsule-Ready

The Ruby Espresso Machine is designed with filter holders' compatibility in mind, such as the Nespresso®, Lavazza Blue®, Espresso Point® and Caffitaly® capsules*, as well as ESE pods.

Stainless Steel Wands

The Ruby Pro 1 espresso machine has dual steel wands. A fully adjustable steam wand and rotative hot water wand.

Controlled Precision

Installed with a high-precision pressure gauge and electronic control for the boiler water level.

Water Supply

Water is available with an easily direct water connection with a rotary pump.

Heat Exchanger 5 Liter Boiler

The 5-liter commercial espresso machine with a heat exchange boiler is a high-powered and efficient coffee-making tool specifically designed for professional use in cafes, restaurants, and other commercial environments. Here are the key features:

  • Boiler Capacity: The 5-liter boiler offers plenty of space for making multiple espresso shots and steaming milk at the same time. Heat exchange machines utilize a single boiler to handle both brewing and steaming tasks.
  • Heat Exchange: In contrast to dual boiler machines that have separate boilers for brewing and steaming, heat exchange machines employ a single boiler with a heat exchange tube. This tube allows hot water from the boiler to heat the brewing water as it flows through, ensuring consistent brewing temperature.
  • Simultaneous Brewing and Steaming: Thanks to the heat exchange system, baristas can brew espresso shots while simultaneously frothing milk for lattes or cappuccinos. This simultaneous operation is essential during peak hours in a commercial setting.
  • Temperature Control: Heat exchange machines maintain steady water temperature for brewing purposes. The boiler remains at steaming temperature, while the heat exchange tube ensures that the brewing water is heated as needed.

Water Quality & Machine Protection

Proper water quality is essential for optimal espresso extraction and long-term machine health. Use the guidelines below to ensure your machine performs at its best.

Parameter Ideal Range Why It Matters
Total Hardness 50-170 ppm Prevents scale buildup while maintaining flavor
pH Level 6.5-7.5 Ensures balanced extraction and protects internal components
Chlorine 0 ppm Eliminates off-flavors and prevents corrosion
TDS (Total Dissolved Solids) 70-150 ppm Optimal mineral content for extraction and taste
Total Alkalinity ~7.0 Stabilizes acidity and extraction
Chloride 0-28 ppm Prevents corrosion (especially in steel boilers)

Important Note

Always refer to your machine's manual for specific water quality recommendations and maintenance schedules.

Advisory

Install a water filtration system to maintain consistent water quality and extend the life of your espresso machine.

What This Means

  • Water that’s too hard → scale buildup, reduced performance
  • Water that’s too soft → flat, dull espresso
  • Improper water can damage internal components over time

Machine-Specific Considerations

  • Some machines (especially with stainless steel boilers) require stricter limits on chlorides

Product FAQ

Does the Gaggia Ruby Pro 1 Group have a rotary pump or a vibratory pump?

The Gaggia Ruby Pro 1 Group uses a rotary pump for stable pressure delivery and consistent flow. This is quieter and more durable than a vibratory pump, making it better suited for continuous commercial use.

Is the Gaggia Ruby Pro 1 Group a direct-plumbed machine, or can it use an internal water tank?

The Gaggia Ruby Pro 1 Group is a direct-plumbed machine with a 3/8" water connection. It does not include an internal water reservoir.

Does the Gaggia Ruby Pro 1 Group have pre-infusion for better espresso extraction?

Yes, the Gaggia Ruby Pro 1 Group offers a form of pre-infusion. Water is introduced at a lower pressure at the start of the shot to gently saturate the coffee puck, which can improve extraction consistency and crema quality.

Does the Gaggia Ruby Pro 1 Group include a cool-touch or no-burn steam wand?

The Gaggia Ruby Pro 1 Group includes a fully adjustable stainless steel steam wand. It is not a cool-touch wand, so the metal can become hot during use and should be handled with caution.

What type of power and voltage does the Gaggia Ruby Pro 1 Group require in the US?

For US installations, the Gaggia Ruby Pro 1 Group is configured for 120V, 60 Hz power and draws 1560 watts (max). It requires a standard dedicated 15 amp circuit.

Is the Gaggia Ruby Pro 1 Group intended for home use or commercial use?

The Gaggia Ruby Pro 1 Group is a compact commercial machine designed for light to medium duty service in cafés, offices, food trucks, and hospitality settings. Enthusiast home users who want a robust, barista-style machine may also use it at home, but it is built primarily with commercial durability and workflow in mind.

Does the Gaggia Ruby Pro 1 Group have a built-in grinder or do I need a separate grinder?

The Gaggia Ruby Pro 1 Group does not include a built-in grinder. A separate espresso-capable grinder is required to get consistent, high-quality shots. Gaggia and other brands offer compatible commercial and prosumer grinders that pair well with this machine.

How long does it take for the Gaggia Ruby Pro 1 Group to heat up and be ready to use?

From a cold start, the Gaggia Ruby Pro 1 Group typically takes about 15–25 minutes to fully heat the boiler, group, and portafilter for stable brewing temperatures. Many commercial users leave the machine on during operating hours for consistent performance.

How does free installation work?

We want to make your purchase as smooth as possible and will pay the installation via rebate on commercial espresso machines. This includes commercial machines with more than 1 group head and 220V.

If the certified installer needed is over 1.5 hours away then we will pay for the installation call (and install up to the value suggested on page minus call fee). Travel will be paid by customer. Inquire if you have any questions about your location.

Please note, any discounts subject to void the paid installation offer.

At Coffeeionado, professional installation is included with qualifying espresso machine purchases. Our goal is to make the process as seamless as possible — from coordinating the technician to getting your machine up and running on day one.

Which Machines Qualify

Free professional installation is included with all espresso machines of 2 groups or more where indicated on the product listing. This policy applies to espresso machines only and does not cover other coffee equipment such as grinders, brewers, or accessories.

If you are unsure whether your machine qualifies, contact us before purchasing and we'll confirm.

What's Included

  • Travel and labor costs for installation within the technician's service area (up to 2 hours of travel)
  • Setup, basic programming, and commissioning of the equipment
  • Scheduling during regular business hours, Monday through Friday
  • Associated taxes and fees related to the installation itself

Installation must be completed within 30 days of delivery of the equipment. The installation benefit lapses after this window and cannot be reinstated.

How Installation Is Arranged

Depending on your purchase, installation is handled one of two ways:

Arranged directly — In many cases, Coffeeionado or the manufacturer will coordinate and pay the technician on your behalf. We will contact you after your order is processed to schedule the visit.

Reimbursement — In some cases, you may be asked to arrange the installation locally using an authorized technician and submit a rebate form for reimbursement. Once approved, the covered amount will be refunded to the original payment method used for your order.

We will confirm which arrangement applies to your purchase at the time of order confirmation. If you have questions before purchasing, contact us and we'll walk you through it.

What's Not Included

The following are outside the scope of the installation policy and remain the customer's responsibility:

  • Travel or callout costs beyond the first 2 hours of the technician's travel time — if your location falls outside the local service area, the overage is your responsibility
  • Water filtration systems and installation materials — including plumbing fittings, tubing, plugs, outlets, and any other ancillary components required to prepare the site
  • Electrical or plumbing work — site preparation must be completed before the technician arrives
  • Training on equipment operation — installation covers commissioning only, not barista or operational training
  • False start or callout fees if the technician arrives and the site is not ready for installation

Important: If a technician arrives and cannot complete the installation because the site is unprepared, you will be responsible for any callout or false start fee charged by the technician. However, your installation benefit remains intact — the visit will be rescheduled at no additional cost to your policy.

Water Filtration Requirement

Water filtration must be installed and operational before or at the time of installation. This is not optional — operating a commercial espresso machine without proper filtration will void the manufacturer's warranty. If filtration is not in place at the time of the technician's visit, installation may need to be rescheduled and the callout fee will be your responsibility.

If you need guidance on water filtration requirements for your machine, contact us before scheduling your installation.

Service Area

Installation coverage is tied to the manufacturer's authorized technician service area, generally within a 1.5-hour radius of the nearest certified technician. If your location falls outside this area, Coffeeionado will make reasonable efforts to arrange a local authorized technician, but travel costs beyond the 2-hour coverage limit remain your responsibility.

Not sure if you're in a service area? Contact us before purchasing and we'll check your location.

After Installation

Once your machine is installed, we'll provide referrals for authorized service technicians in your area for ongoing maintenance and repairs. Coffeeionado offers lifetime support on all equipment we sell — we're here long after the install is done.

Governing Terms

This installation policy forms part of your agreement with Coffeeionado and is subject to our Terms of Sale and Terms of Service. In the event of any conflict, the Terms of Service governs.

Can I pick up the machine at your store?

We do not have a showroom or storefront for customer pickups, so orders cannot be picked up directly from us. That said, there is an exception for La Spaziale and La Pavoni products, you can contact us to arrange.

However, if you'd prefer, we can arrange to have your machine shipped to a local freight terminal/location for pickup instead. Let us know your city/state (or ZIP code), and we’d be happy to check the nearest terminal options for you.
