Powering Hundreds of Businesses Including:

There comes a point where the recovery time of a single boiler stops being a minor inconvenience and starts feeling like a design flaw in your routine. The Peppina Evo V2 addresses this with a dedicated dual boiler configuration that allows for back-to-back extractions and immediate steaming without the temperature surfing that complicates lesser machines. It is a heavy, tactile piece of equipment meant for the person who has moved past the novelty of home espresso and into the pursuit of actual consistency. You stop adapting your workflow to the machine and start dictating the results yourself.

Product Features

Adjustable Water Balance

The Torre Peppina EVO lets you change the water balance in the steam boiler — lower the balance for more steam (ideal for cappuccinos and lattes) or raise it for more hot water for teas and Americanos. This gives menu flexibility without hardware swaps or complicated service.

1.5 L Steam Boiler

The V2 upgrade increases the steam boiler from 1.2 liters to 1.5 liters, giving noticeably more steam capacity for extended milk work. That extra volume helps you texture multiple drinks back-to-back without constantly waiting for recovery.

Dual Boiler System

Separate coffee and steam boilers let you brew at the correct espresso temperature while steaming simultaneously, eliminating temperature compromise between extraction and milk texturing. That means consistent shots and steady steam pressure during busy runs.

E61 Group Head With Flow Control

The machine uses an E61 group head fitted with flow control, so you can shape extraction and manage preinfusion dynamics directly at the group. Flow control helps dial in crema, body and shot timing with finer mechanical control than a fixed-flow head.

Multifunction Color Touchscreen

A multifunction color touchscreen gives programmable control of preinfusion time and maintenance cycles and displays digital brew and steam pressure gauges. The on-screen controls make routine adjustments and monitoring intuitive for a prosumer operator.

Thickened Boiler Flanges

V2 includes thickened flanges on both the coffee and steam boilers for improved durability over the lifetime of the machine. That reinforces the areas most subject to stress, supporting long-term reliability in a high-use home or small café setting.

The Coffeeionado Take

Who's It For:

  • Enthusiasts who want flow control on a proven E61 platform — The manual flow control valve lets you shape pressure curves without buying aftermarket kits
  • Home baristas pulling 50–75 drinks daily — Dual 0.75L boilers and a rotary pump handle sustained home use with plumb-in capability
  • Experienced operators who value simultaneous brew and steam — Independent boilers let you pull shots and texture milk at the same time without temperature compromises

Right For You If:

  • You are pulling 50–75 shots daily and want to actively profile pressure to optimize different beans and roast levels.
  • You have a high-quality grinder and a scale — flow control rewards precise dosing and consistent grind.
  • Your counter can handle a full-size E61 machine and you have 110-120V power with the option to plumb in.

Things to Consider:

  • E61 groups need 35–60 minutes to fully stabilize — this is one of the longer warm-up times in the category; budget for a smart plug.
  • The 0.75L brew boiler handles home volume well but will not match the recovery of 1.5L+ brew boilers during sustained entertaining.
  • No programmable shots — if you want volumetric dosing, you will need to dose manually or use a scale.

Our Take:

The Peppina Evo V2 is Torre is flagship E61 dual boiler — the flow control valve gives you genuine manual control over the extraction curve, and the rotary pump with plumb-in capability means you can build a serious dedicated setup around it. If you are the kind of person who wants to grow into pressure profiling on a platform that will not hold you back, this is one of the most capable E61 machines in its class.

Peppina Group Head

Flow Control - Group Head Pressure Gauge

Customize your shots on the fly with the group head pressure gauge that allows you to regulate the flow rate and pressure while extracting espresso. This hands-on approach gives you enhanced precision in crafting each shot to achieve perfection.

Programmable Parameters

Mounted on top of the group head is a brew pressure gauge that allows you full manual control over the brew pressure as the espresso shot is extracting. With this, you can be sure that all your flavor profiles will be to your exact taste.

The buttons on the LCC display allow you to send the machine to sleep and see the current coffee boiler temperature as well as the steam temperature.

Direct Plumb or Reservoir

The machine comes with a top, easy to fill, removable water tank. The tank is a large 2.7 liters. It can also be directly plumbed in (no need for a tank).

Peppina Display

Multi-function Display

From the bright display on the machine, you can see any alarms (such as maintenance or other issues), set maintenance planning, change the settings, adjust the temperatures coffee boiler and steam boiler, set you ECO mode parameters and keep track of shots pulled with the counter.

Auto ON/OFF Feature

This premium espresso machine features the ability to automatically power on and off. Giving you the power to have the machine ready for when you are getting up or any time of the day.

Dual Manometers

You'll find dual manometers on espresso machines for monitoring brew and steam pressure. The brew pressure gauge checks the resistance from the coffee grounds in the filter basket when the pump is running to ensure optimal extraction. Meanwhile, the steam pressure gauge on heat exchange or dual boiler machines shows the boiler's steam pressure for safety, usually rated at 2.0 bar for structural integrity.

Shot Control

This home espresso machine is equipped with advanced features that ensure precision and efficiency in coffee preparation. This machine keeps track of both partial and total doses through a counter system, ensuring accuracy in serving sizes. The coffee delivery time is also closely monitored, guaranteeing quick and consistent service. Additionally, the Peppina can be switched into an active Reserve mode (for any set time) during slower periods to conserve energy without compromising on performance.

PID Temperature Control

PID, an abbreviation for Proportional-Integral-Derivative, is a feedback loop controller utilized in espresso machines to regulate and maintain the water temperature within the boiler. It means you can regulate the temperature on the machine.

With PID controller espresso machines, you ensure that the water temperature remains constant and ideal for producing high-quality espresso. You can adjust the temperature from 85 °C to 100 °C (185 °F to 212 °F).

Steam Control

A newly innovative technology has been incorporated by Torre in this machine. Not only can you adjust the steam boiler pressure from 0.5 to 1.6 bar. But you can adjust the balance of the water to steam. This novel ability gives you full control of the output of the espresso.

Peppina Boiler

Dual Boiler Espresso Machine

A dual boiler espresso machine is engineered with two distinct boilers: one for brewing espresso at the perfect temperature and another for generating steam to froth milk. Unlike single boiler machines that share one boiler for both tasks, dual boilers enable simultaneous brewing and steaming, ensuring consistent temperature and pressure for superior quality espresso beverages.

Stainless Steel Boilers

Stainless steel boilers in espresso machines offer exceptional durability and corrosion resistance. They are designed to withstand daily use without losing efficiency, even in high humidity or water-exposed environments. Despite having lower thermal conductivity than copper, stainless steel boilers require less material for construction. Additionally, they are compatible with descaling chemicals, making maintenance hassle-free for optimal performance.

Rotary Pump for Quieter Operations

Rotary pump espresso machines offer many advantages, especially for home usage. Its low noise level is a key benefit, ensuring a quieter espresso experience. Rotary pumps have a longer lifespan of approximately 15 years, making them a reliable option for long-term use and reducing the need for frequent replacements. Additionally, they provide more consistent pressure and achieve quick pressure buildup compared to vibratory pump.

Joystick and Arms

The Torre Peppina espresso maker is equipped with innovative Joystick knobs that offer rapid and convenient control. These knobs can be locked in any position for effortless hands-free use. Additionally, the machine is designed with multi-directional wands, providing enhanced mobility and adaptability to accommodate various sizes of pitchers or cups.

Insulated Boiler

Insulation is crucial for boilers to maintain heat effectively. Espresso machines are equipped with thermostats, pressure stats, and PIDs to constantly monitor and regulate the temperature of the boiler. If the temperature falls below a specific level, a heating element is activated to restore it. Boilers that are well-insulated release less heat, resulting in lower energy consumption for maintaining their temperature.

Water Quality & Machine Protection

Proper water quality is essential for optimal espresso extraction and long-term machine health. Use the guidelines below to ensure your machine performs at its best.

Parameter Ideal Range Why It Matters
Total Hardness 50-170 ppm Prevents scale buildup while maintaining flavor
pH Level 6.5-7.5 Ensures balanced extraction and protects internal components
Chlorine 0 ppm Eliminates off-flavors and prevents corrosion
TDS (Total Dissolved Solids) 70-150 ppm Optimal mineral content for extraction and taste
Total Alkalinity ~7.0 Stabilizes acidity and extraction
Chloride 0-28 ppm Prevents corrosion (especially in steel boilers)

Important Note

Always refer to your machine's manual for specific water quality recommendations and maintenance schedules.

Advisory

Install a water filtration system to maintain consistent water quality and extend the life of your espresso machine.

What This Means

  • Water that’s too hard → scale buildup, reduced performance
  • Water that’s too soft → flat, dull espresso
  • Improper water can damage internal components over time

Machine-Specific Considerations

  • Some machines (especially with stainless steel boilers) require stricter limits on chlorides

Product FAQ

Does the Torre Peppina Evo have a rotary pump or a vibratory pump, and how loud is it during operation?

The Torre Peppina Evo Dual Boiler typically comes equipped with a rotary pump, which is notably quieter than a vibratory pump and provides more consistent pressure. Noise levels are comparable to a low hum, making it suitable for home kitchens without being overly disruptive. Always confirm the pump type with the latest product listing, as specifications can vary by production run.

Is the Torre Peppina Evo a dual boiler with independent temperature control for brew and steam?

Yes. The Torre Peppina Evo is a true dual boiler machine: one boiler is dedicated to brewing and the other to steaming. Each boiler has independent temperature control, allowing you to fine‑tune brew temperature for espresso while maintaining full steam power for milk frothing without waiting between tasks.

Does the Torre Peppina Evo offer pre‑infusion, and is it programmable?

The machine includes a pre‑infusion function designed to gently saturate the coffee puck before full pressure extraction. On most configurations, pre‑infusion time and/or pressure can be adjusted through the machine’s control interface, allowing you to tailor it to different coffees and roast levels. Check the manual or product page for the exact adjustment range on your specific model.

Can the Torre Peppina Evo be direct‑plumbed, and does it also have an internal water reservoir?

The Torre Peppina Evo is usually set up to support both direct plumbing and tank use. It includes an internal reservoir for flexible placement on a countertop and can be converted to a direct‑plumb configuration if you have a compatible water line. Installation of the plumb‑in kit may require basic plumbing skills; many users opt to have a professional handle the connection.

Are the steam and hot water wands on the Torre Peppina Evo cool‑touch or no‑burn?

Yes, the Torre Peppina Evo generally features insulated, cool‑touch (no‑burn) steam and hot water wands. They still become warm in use but remain significantly cooler than traditional uninsulated wands, reducing the risk of burns and making them easier to handle and clean. Only the metal tip should be treated as hot during steaming.

What size portafilter does the Torre Peppina Evo use, and are commercial baskets compatible?

The Torre Peppina Evo uses a 58 mm commercial‑standard portafilter. This means most 58 mm baskets, tampers, and many third‑party accessories (such as distribution tools and bottomless portafilters) are compatible. The machine usually ships with both single and double baskets; check the product listing for what’s included.

Does the Torre Peppina Evo include PID temperature control and a shot timer?

Yes. A PID controller manages boiler temperatures, improving stability and allowing small, precise temperature adjustments for different coffees. The machine also usually includes an integrated shot timer—either on the main display or via a dedicated readout—so you can monitor extraction time without a separate timer.

What kind of power requirements and warm‑up time should I expect for the Torre Peppina Evo?

The Torre Peppina Evo is designed for standard US household power, 110–120 V at 15 A. Because it’s a dual boiler machine with substantial thermal mass, full warm‑up to stable brew and steam temperatures usually takes about 20–30 minutes. Many users turn it on ahead of use or plug it into a smart switch for scheduled warm‑up.

Please note, any discounts subject to void the paid installation offer.

At Coffeeionado, professional installation is included with qualifying espresso machine purchases. Our goal is to make the process as seamless as possible — from coordinating the technician to getting your machine up and running on day one.

Which Machines Qualify

Free professional installation is included with all espresso machines of 2 groups or more where indicated on the product listing. This policy applies to espresso machines only and does not cover other coffee equipment such as grinders, brewers, or accessories.

If you are unsure whether your machine qualifies, contact us before purchasing and we'll confirm.

What's Included

  • Travel and labor costs for installation within the technician's service area (up to 2 hours of travel)
  • Setup, basic programming, and commissioning of the equipment
  • Scheduling during regular business hours, Monday through Friday
  • Associated taxes and fees related to the installation itself

Installation must be completed within 30 days of delivery of the equipment. The installation benefit lapses after this window and cannot be reinstated.

How Installation Is Arranged

Depending on your purchase, installation is handled one of two ways:

Arranged directly — In many cases, Coffeeionado or the manufacturer will coordinate and pay the technician on your behalf. We will contact you after your order is processed to schedule the visit.

Reimbursement — In some cases, you may be asked to arrange the installation locally using an authorized technician and submit a rebate form for reimbursement. Once approved, the covered amount will be refunded to the original payment method used for your order.

We will confirm which arrangement applies to your purchase at the time of order confirmation. If you have questions before purchasing, contact us and we'll walk you through it.

What's Not Included

The following are outside the scope of the installation policy and remain the customer's responsibility:

  • Travel or callout costs beyond the first 2 hours of the technician's travel time — if your location falls outside the local service area, the overage is your responsibility
  • Water filtration systems and installation materials — including plumbing fittings, tubing, plugs, outlets, and any other ancillary components required to prepare the site
  • Electrical or plumbing work — site preparation must be completed before the technician arrives
  • Training on equipment operation — installation covers commissioning only, not barista or operational training
  • False start or callout fees if the technician arrives and the site is not ready for installation

Important: If a technician arrives and cannot complete the installation because the site is unprepared, you will be responsible for any callout or false start fee charged by the technician. However, your installation benefit remains intact — the visit will be rescheduled at no additional cost to your policy.

Water Filtration Requirement

Water filtration must be installed and operational before or at the time of installation. This is not optional — operating a commercial espresso machine without proper filtration will void the manufacturer's warranty. If filtration is not in place at the time of the technician's visit, installation may need to be rescheduled and the callout fee will be your responsibility.

If you need guidance on water filtration requirements for your machine, contact us before scheduling your installation.

Service Area

Installation coverage is tied to the manufacturer's authorized technician service area, generally within a 1.5-hour radius of the nearest certified technician. If your location falls outside this area, Coffeeionado will make reasonable efforts to arrange a local authorized technician, but travel costs beyond the 2-hour coverage limit remain your responsibility.

Not sure if you're in a service area? Contact us before purchasing and we'll check your location.

After Installation

Once your machine is installed, we'll provide referrals for authorized service technicians in your area for ongoing maintenance and repairs. Coffeeionado offers lifetime support on all equipment we sell — we're here long after the install is done.

Governing Terms

This installation policy forms part of your agreement with Coffeeionado and is subject to our Terms of Sale and Terms of Service. In the event of any conflict, the Terms of Service governs.

Can I pick up the machine at your store?

We do not have a showroom or storefront for customer pickups, so orders cannot be picked up directly from us. That said, there is an exception for La Spaziale and La Pavoni products, you can contact us to arrange.

However, if you'd prefer, we can arrange to have your machine shipped to a local freight terminal/location for pickup instead. Let us know your city/state (or ZIP code), and we’d be happy to check the nearest terminal options for you.
